Biography

Chef Joel Ornelas is originally from Puerto Vallarta and has built a career spanning more than twenty years in professional kitchens. During this time he has worked in several of the most respected restaurants across Mexico, Spain, and England.

His work has earned recognition throughout the Mexican culinary world, including the Millesime Young Talent Award in 2019 and multiple appearances on the list of the best restaurants in Mexico according to Culinaria Mexicana.

 

Philosophy

Joel’s cooking is rooted in regional history, but it isn’t nostalgic for nostalgia’s sake. He uses the Manila Galleon idea as a lens, local ingredients shaped by international technique, so each course carries a sense of place while still feeling unexpected. The goal isn’t to “reinterpret” classics; it’s to make something delicious, original, and unmistakably Tintoque.

He approaches each course as a balance of memory and technique: familiar Mexican flavors reworked with precision and restraint. The menu is built around what the kitchen can source at its peak, then refined through timing, temperature, and texture—so the experience feels cohesive from the first bite to the last, not like a collection of dishes.
